Starting again

So I fail havent been keeping up. So in case you were hanging on hoping for exciting news about my weight loss I will no longer be posting on that. However I have had several requests for recipes so I thought Why not post them here. I will put my own recipes with notes as to where I got it and how I made it my own so as not to plagiarize them. The first is my Sweet Potato Shepherds pie.
I got it from Rachel Ray but have tweeked it a little to make it my own.
*I start by cooking about 5 -6 large sweet potatoes quartered for mashing drain and set aside
*saute 1 cup ea. chopped carrot, celery and onion
*Add 2 lb ground turkey when the veg start to soften, add S&P and 1tbs ea (or to taste) garlic, fresh rosemary, thyme and sage. [ RR calls for poultry seasoning but I like it fresh ]
*Add 1tbs butter to melt, then 1tbs flour and mix well do not let flour brown just lightly cook
*Add 1 cup chicken stock stir to combine well and bring to a boil then off the heat and set aside

*Back to potatoes- put drained potatoes into a bowl to mash, I use a stand mixer, add 2 soft bananas, S&P, and 2 tbs butter, 1/2-1 cup cream or milk mix well until mashed and well combined. [RR uses hot sauce but I like it better w/o]

Assemble: pour turkey mix into bottom of baking dish (9x13 or similar size) Add a layer of frozen peas or green beans [RR uses peas but I like green beans too] layer on the potatoes and top with 2 cups of sharp cheddar cheese. I have had suggestions for omitting the cheese and using pecans but I like the tang and saltiness the cheese adds as opposed the sweetness pecans would add. Bake at 350 untill warmed through and cheese is melty.


I hope you enjoy it's one of my favorite fall dishes and seems to be a crown pleaser
